Every once in a while I get a craving for grilled cheese, my ultimate comfort food. I love to jazz it up in all kinds of ways, so I never get bored. Recently, I stumbled across a fabulous twist I just had to try and make it my own, a zucchini grilled cheese!
At first it seemed rather daunting and I questioned my ability to make such a sandwich, since I have flopped with zucchini based meals previously. They always turned out squishy or watery, but this time the recipe passed with flying colors. I gobbled it down for lunch and added it to meal plans right away, so I do hope you will find enjoyment in my version of zucchini grilled cheese.
Easy Zucchini Grilled Cheese
Yield: 4 sandwiches, prep time: 20 minutes, cook time: 20 minutes
2 c. medium zucchinis
¼ c. cornstarch
½ c. parmesan cheese, reduced fat
1 medium egg, beaten
1 c. reduced fat mozzarella cheese, shredded
Non-stick cook spray
Grate zucchinis to a larger size, as pictured.
Place grated zucchini in large mixing bowl, remove excess moisture from zucchini with paper towel or kitchen towel. This would be one of the most critical steps. If you do not remove excess moisture you will get more of a zucchini hash to be eaten with a spoon in the skillet than a bread alternative.
Once moisture removed, add parmesan, cornstarch, salt, pepper and beaten egg to zucchini, mix well. I decided my hands were my best advocate and jumped right in to mix it up!
Meanwhile, heat large skillet on medium heat, add non-stick cook spray liberally. And when I say liberally, I mean it!
Add about ¼ cup of zucchini mixture to skillet, shape into squares with spatula.
Cook until golden brown on each side of zucchini patty.
Remove from heat and place onto paper towels to remove excess moisture once again.
Return 4 patties to your warm skillet, reduce heat to low.
Add shredded cheese to patties, distribute equally among the four. Once you have distributed cheese, place remaining 4 patties onto the cheese to mimic a sandwich.
Heat until cheese is melted. Remove from heat and enjoy with your favorite compliment to grilled cheese. I decided some tomato soup for dipping was the best option!
Fun swaps and changes:
The next time I make these I intend to do some switcharoos! I plan to try a vegan cheese for my vegetarian clients. For my husband I plan to try adding some turkey or chicken bacon and swapping the cheeses around. The options are endless with this amazing new sandwich!
