I love sweet potatoes. TRULY LOVE them. I have tried them all different ways, and I have to say I have found my absolute favorite recipe. Best part is, super simple too!
Did you know roasting sweet potatoes is the best way to bring out the natural sweet flavor? The longer you cook the tater the better the flavor. Well, I have learned two ingredients to add to the mix to make it so much better than even their natural roasted sweetness! And the nutrition freak in me loves the fact they are full of vitamin A for my tiny tot!
The best part? My family absolutely loves this recipe! There is something about the coconut sugar and oil which really brings to life the sweet potatoes. Oh, and for you coconut haters, no worries, it does not taste like you took a bite into a coconut, I promise.
So without further verbiage, I hope this recipe finds a place in your kitchen this spring/summer. It is a great addition to the cookouts. Just the other day we coupled it with a charcoal grill steak and mix sautéed veggies. We were so thankful we had extra sweet potatoes the next morning to throw into the mix with eggs and sausage, delish!
Easy & Amazing Sweet Potatoes
Yield: 4 servings
2 large sweet potatoes
1/3 cup unrefined coconut oil, melted
2 tbsp coconut sugar
1/3 cup water
non-stick cook spray
Pre-heat oven to 415 degrees.
Wash and cut sweet potatoes into 1/2 inch cubes.
Place into glass baking dish, add water to pan. Pour melted coconut oil over sweet potatoes. Sprinkle coconut sugar evenly.
Cover with aluminum foil. Roast in oven for 45 minutes to one hour.
